Roast Vegetable Salad

Crunchy and fresh, this salad is simple yet enticing.

Ingredients

  • 1 cup green leaves (either spinach leaves or sliced lettuce)
  • 1/8 red onion (finely diced)
  • ¼ continental cucumber (diced)
  • 1 gourmet tomato (diced)
  • ¼ cup diced roasted vegetables (pumpkin and sweet potato)
  • 1/8 cup diced crispy bacon (optional)
  • ¼ cup roasted almonds
  • greek feta
  • salad dressing of choice

Instructions

    1. Prepare leaves and spread across bowl/dish.
    2. Layer with vegetables.
    3. Sprinkle with nuts and cheese.
    4. Drizzle with dressing of choice.

Notes

  1. Additional ingredients – I love to add a medley of fresh herbs if I have them on hand so feel free to experiment. Mint and coriander are my go-tos.
  2. Dietary alternations – omit the bacon for a vegetarian option and cheese for a DFO.
  3. Nuts – can be left out or subbed for pepitas, sunflower seeds or cashews.
