Chicken Schnitzel

Moist yet crispy, this schnitzel recipe is known as chicken nuggets in our household and is an absolute winner every time it's served.

Ingredients

  • 2 chicken breast
  • 1/4 cup flour
  • salt and pepper
  • 2 large eggs (whisked)
  • 1.5 cups bread crumbs
  • olive oil (to fry)

Instructions

    1. Slice chicken breast into pieces of 1cm thickness.
    2. Roll chicken in seasoned flour then coat in whisked eggs and crumb with bread crumbs.
    3. Heat olive oil on medium-high heat in frying pan.
    4. Fry chicken pieces for roughly 7mins per side or until brown and crispy crumb with white inside. Serve with a side of veg or use in Japanese curry, chicken lasagna or homemade sushi.

Notes

  1. Schnitzel size – the thinner the schnitzel, the fraster it will cook. 1cm thickness ensures moisture is retained and cooking time is roughly 7 mins a side.
