Ingredients

  • 1 cup desiccated or shredded coconut
  • 1 cup mixed nuts (cashews, almonds. etc)
  • 1 cup pumpkin seeds or pepitas
  • 1 cup sesame seeds
  • 1 cup sunflower seeds
  • 1 cup rolled oats
  • 125g butter
  • 1/2 cup brown sugar
  • 1/4 cup honey
  • 150g dried fruit (cranberries, sultanas or diced apricots)

Instructions

    1. Brown seeds, oats, nuts and coconut in frying pan or dry roast in oven.
    2. Boil butter, sugar and honey together on stove or in microwave.
    3. Mix wet and dry ingredients (including dried fruit).
    4. Press firmly into a lined baking tin and refrigerate.

Notes

1. Browning – coconut and small seeds will brown fastest so be careful to avoid burning.

2. Storage – can be refrigerated for up to a week or frozen for 3 months and defrosted as needed.
