Muesli Bars

Ingredients
- 1 cup desiccated or shredded coconut
- 1 cup mixed nuts (cashews, almonds. etc)
- 1 cup pumpkin seeds or pepitas
- 1 cup sesame seeds
- 1 cup sunflower seeds
- 1 cup rolled oats
- 125g butter
- 1/2 cup brown sugar
- 1/4 cup honey
- 150g dried fruit (cranberries, sultanas or diced apricots)
Instructions
- Brown seeds, oats, nuts and coconut in frying pan or dry roast in oven.
- Boil butter, sugar and honey together on stove or in microwave.
- Mix wet and dry ingredients (including dried fruit).
- Press firmly into a lined baking tin and refrigerate.
Notes
1. Browning – coconut and small seeds will brown fastest so be careful to avoid burning.
2. Storage – can be refrigerated for up to a week or frozen for 3 months and defrosted as needed.
