Meat Patties

AKA rissoles. Can be served on their own with a side of veg or used in burgers. An absolute winner in our household!

Ingredients

  • olive oil for cooking
  • 500g mince
  • 1 slice bread or store bought bread crumbs (blitzed until fine)
  • 1 carrot (blitzed until fine)
  • 1 zucchini (blitzed until fine)
  • handful spinach/kale leaves (blitzed until fine)
  • 1 brown onion (finely diced)
  • 1 tbsp mixed herbs
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 egg (beaten)

Instructions

    1. Prepare ingredients as per list.
    2. Heat oil in frying pan.
    3. Combine all ingredients in a large bowl.
    4. Using 1/3 or 1/2 measuring cup, scoop mix into your hand and roll into desired shape.
    5. Cook in hot oil until brown on both sides and cooked through, using spatula to squash until roughly 2cm in width.

Notes

1. Texture – if you find they're falling apart, add another whisked egg and combine.

2. Serving suggestions – with a side of veg, on a burger or frozen for future meals.

3. Can be frozen raw for future meals. Keeps for 3 months in the freezer.
