Meat Patties

AKA rissoles. Can be served on their own with a side of veg or used in burgers. An absolute winner in our household!
Ingredients
- olive oil for cooking
- 500g mince
- 1 slice bread or store bought bread crumbs (blitzed until fine)
- 1 carrot (blitzed until fine)
- 1 zucchini (blitzed until fine)
- handful spinach/kale leaves (blitzed until fine)
- 1 brown onion (finely diced)
- 1 tbsp mixed herbs
- 1 tsp salt
- 1/2 tsp pepper
- 1 egg (beaten)
Instructions
- Prepare ingredients as per list.
- Heat oil in frying pan.
- Combine all ingredients in a large bowl.
- Using 1/3 or 1/2 measuring cup, scoop mix into your hand and roll into desired shape.
- Cook in hot oil until brown on both sides and cooked through, using spatula to squash until roughly 2cm in width.
Notes
1. Texture – if you find they're falling apart, add another whisked egg and combine.
2. Serving suggestions – with a side of veg, on a burger or frozen for future meals.
3. Can be frozen raw for future meals. Keeps for 3 months in the freezer.
