Chicken Lasagna

Ingredients
- 3 chicken breasts (sliced like schnitzel, crumbed and fried in oil)
- 1 large sweet potato (peeled and thinly sliced)
- 700g tomato passata
- 600ml thickened cream
- 15g fresh basil leaves (blended into a paste)
- 2 brown onions (finely diced)
- 2 tsp minced garlic
- 2 tbsp paprika
- 2 tbsp mustard powder
- 400g spinach leaves
- 375g lasagna sheets
- grated mozarella cheese
Instructions
- Slice, crumb and fry chicken.
- Heat oven to 200C.
- Combine tomato passata, cream, onion, herbs and seasonings in a bowl.
- Dice chicken.
- Grease oven dish and layer pasta sheets, sauce, sweet potato, spinach leaves and chicken until full.
- Cover with cheese.
- Bake in oven for 1-1.5 hrs or until sweet potato is soft and cheese is brown on top.
Notes
1. Make-ahead – can be prepped the night before and put in the oven 24-hrs later.
