Chicken Lasagna

Chicken Lasagna

Total Time: 2 hours

Ingredients

  • 3 chicken breasts (sliced like schnitzel, crumbed and fried in oil)
  • 1 large sweet potato (peeled and thinly sliced)
  • 700g tomato passata
  • 600ml thickened cream
  • 15g fresh basil leaves (blended into a paste)
  • 2 brown onions (finely diced)
  • 2 tsp minced garlic
  • 2 tbsp paprika
  • 2 tbsp mustard powder
  • 400g spinach leaves
  • 375g lasagna sheets
  • grated mozarella cheese

Instructions

    1. Slice, crumb and fry chicken.
    2. Heat oven to 200C.
    3. Combine tomato passata, cream, onion, herbs and seasonings in a bowl.
    4. Dice chicken.
    5. Grease oven dish and layer pasta sheets, sauce, sweet potato, spinach leaves and chicken until full.
    6. Cover with cheese.
    7. Bake in oven for 1-1.5 hrs or until sweet potato is soft and cheese is brown on top.

Notes

1. Make-ahead – can be prepped the night before and put in the oven 24-hrs later.
